Here is a much healthier version of Chicken Parmesan for your next Italian meal…and so easy too! Just pound out 4 chicken breast, season with salt and pepper and a little bit of Italian seasoning too. Grill chicken for about 5-7 minutes each side, then top with a slice of Mozzarella cheese. Heat up on the grill as well a can of fire roasted tomatoes( or regular Italian style) in a small saucepan.
I also sliced a roll of polenta about 1 -2 inches thick, spayed with olive oil and grilled for about 6-8 minutes each side. I placed 2 slices of the polenta on a plate, topped with grilled chicken and poured the diced tomatoes over top. Garnish with fresh shaved Parmesan cheese.
So delicious! Goes well with Grilled Romaine Heartsas well!
