Another “Date Nite In ” dinner! I incorporated my husbands favorite Italian
dish and placed it on top of a pizza. I used dollops of ricotta cheese and a can of fire roasted tomatoes as a base. And of course red pepper flakes to create a nice heat to go along with the cooling and creamy ricotta!
1/2 pound of shrimp..sauteed in EVOO, 3 diced garlic cloves and finely diced shallots. Season with salt and pepper, and 1 tbsp Italian seasoning. Cook for about 3-5 min until slightly pink
1 pizza dough
1 can drained fire roasted tomatoes
1/2 cup part skim ricotta
Pre heat oven to 450 with pizza stone. Remove and place pizza dough on top. Spread the tomatoes on the crust and place dollops of ricotta all over. Spread around the slightly baked shrimp. Sprinkle with 2 tsp red pepper flakes. Bake for 15-18 min, till crust in brown and the ricotta cheese is also slightly brown.
Top with fresh chopped basil and grated Parmesan cheese
Oh have some extra red pepper flakes available too! We like it HOT!
