Making a stew in the crock pot today to surprise my husband! I never make because I never really enjoyed the traditional ones. So today I’m revamping the “old” recipe in to this tasty one!
1 lb of stew meat, seasoned with salt and pepper and then tossed lightly in flour and browned with 1 onion diced and 4 garlic cloves diced.
1 large tomato diced
1 1/2 cups of baby carrots
3/4 bag of small gourmet yellow potatoes ( the bigger ones halved)
1/2 cup marinara sauce
1 tbsp Italian seasoning
2 cups of fresh green beans trimmed
1 cup of Kale chopped
1 can of fat free beef broth
1 tsp red pepper flakes
2 cups of water..enough to almost over the beef and vegetables in the crock pot.
Mix together well in crock pot. Set on Low and cook for 6-8 hours. I’m serving mine over top brown rice, or you could use whole wheat yolk-less noodles too.
