I love using the leftovers to create a new meal and really get the most out of my meals during the week. It saves money in the long run and you don’t end up throwing away the leftovers later on when you forget about it in the refrigerator.
Tonight I used the leftover over Spicy Pulled Chicken from the other nite this week to make a Spicy Chicken Pizza tonite! Used a slotted spoon to strain out the chicken from all the sauce and layered on the vegetables I had already had chopped up from the soft tacos the other nite. Topped with reduced fat cheddar cheese and added in a few banana peppers and of course a couple shakes of hot sauce. Baked at 400 in oven for about 15-20 minutes.
