3/4 cup rolled oats
1/2 cup brown rice bread crumbs or panko
1 onion finely diced
2 garlic cloves diced
1/2 can of black beans drained
1 can of tomato paste, save half for the topping
1/2 bunch of cilatro chopped
1 egg or equivalent egg beaters
1 green pepper finely diced
1 red pepper finely diced
1/2 can of green chilies
1 tsp cumin
1 tsp chili powder
1 tsp red pepper flakes
salt and pepper
pre heat oven to 375. Combine all the ingredients in a bowl, and place in a prepared baking dish. Mold into a meatloaf. Taling rhe left over paste…place in small bowl and add 2 tbspn of water and 4 dashes of hot sauce. Mix well and then spread on the top of the meatloaf. Bake for45- 55min. Serve with chopped scallions and a littel dollup of reduced fat sour cream.
