You can use any type of squash. I bought “Peter Pan” Squash at the Green Market, so that’s what I am using tonight
Cut squash in half, half again and then length wise, clean out seeds. Place in baking dish face down. Add in 2 tbs water. Bake at 375 for about 40-45 min. Flip over and drizzle with olive oil, season with salt and pepper. Sprinkle with 1 tbsp thyme and 1 tbsp rosemary. Add 3 cloves of garlic minced too. Cook additional 20 min. Serve each half with skin intact.
