I use my Roasted Tomato Soup with Brown Rice, as the base and add browned ground turkey breast or lean ground beef. ( or if vegan use soy crumbles)
(If you don’t have the soup, you can use 2 can of fire roasted tomatoes 1 drained and one undrained, 3 cloves of garlic diced, 1 small onion diced, 1 tbsp Italian seasoning 1 tsp red pepper flakes)
4 green bell peppers, cleand and tops cut off..( brown in pan on med-high heat to blister the outside)
Pre heat oven to 375.Place in baking pan, so that you can fill the green bell peppers to the top with the mix. Top with mozzarella cheese. Bake for 25 -30 min.
Note: You can use white cannelli beans if you don’t have any brown rice ready.
