Easy, delicious and so00 healthy too!
What you’ll need:
2 cans diced tomatoes undrained ( I use Fire roasted tomatoes for the flavor)
1 can white beans rinsed
1 can light red kidney beans rinsed
1 can pinto beans rinsed
1 can sweet corn (optional)
1 small can of tomato paste
1 green pepper diced
2 cloves garlic diced
2 tbspn chili powder
1 tbspn cumin
1tbspn paprika
1 tspn cayenne pepper
salt and pepper to taste
Add all ingredients to the crock pot and stir. Set on low and in 8 hours you’ll come home to house smelling of yummy chili!
I serve it over brown rice and top with scallions or chopped viadalia onion and low fat sharp cheddar cheese. And as always tabasco sauce to taste!
